Spiced Apple Cake

125g Butter
1 Cup Cooked Apples (or 225g Canned Apples)
1 Cup Sugar
1 Egg

1 Teaspoon Cinnamon
½ Teaspoon Each of Nutmeg, Allspice and Salt

1 Teaspoon Baking Soda

1¼ Cups Flour

1 Teaspoon Cinnamon
½ Cup Sultanas
Icing Sugar to Serve

  • Preheat oven to 150*C
  • Melt butter and combine in a bowl with the apple, sugar and egg. Leave to stand for 5 minutes
  • Sift dry ingredients. Add to the apple mixture along with sultanas stirring until just blended
  • Spread in a greased 20cm cake tin and bake for 50 minutes or until springy to touch
  • Sprinkle with icing sugar when cool
