Vegetarian pizza

Ingredients (serves 4)

  • 2 pizza bases (homemade or bought)
  • 1/2 cup hommus dip
  • 250g chargrilled red capsicum
  • 1/2 cup (110g) semi-dried tomatoes, chopped
  • 250g chargrilled eggplant
  • 1/2 cup (80g) pitted kalamata olives
  • 175g fresh ricotta cheese
  • 50g parmesan cheese, finely grated
  • 40g baby rocket leaves

Method

  1. Preheat oven to 220°C. Lightly grease two flat baking trays. Place 1 base on each tray.
  2. Spread 1/4 cup hommus evenly over each pizza base. Cut capsicum into thick strips.
  3. Top pizza bases with capsicum, tomatoes, eggplant and olives. Crumble ricotta over pizzas. Bake for 15 to 20 minutes, swapping trays over in oven after 12 minutes, or until bases are crisp and golden.
  4. Sprinkle with parmesan. Top with rocket. Season with salt and pepper. Serve.

Notes & tips

  • Variation: You could also top this pizza with chargrilled pumpkin, sweet potato or flat mushrooms.
