Golden Syrup Banana Puddings

The golden syrup in these puddings brings the banana and walnut flavours to life - they're best served still warm, drizzled with golden syrup and cream or a scoop of vanilla ice-cream.

Ingredients

  • 50g soft butter
  • 1 egg, beaten
  • 1 banana, mashed
  • 50ml milk
  • 50g caster sugar
  • 50g brown sugar
  • 50ml vegetable oil
  • 50g almond meal
  • 125g plain flour
  • ½ tsp baking powder
  • ½ tsp ground ginger
  • 50g walnut pieces
  • 8 tbsp golden syrup
  • Thick cream to serve

Method

1. Preheat oven to 170ºC. Cream butter and sugar, add beaten egg and mix. Combine mashed banana

and vegetable oil. Add to butter mixture, fold in dry ingredients and milk, and mix until just combined.

2. Grease four pots of a deep, non-stick muffin tray with butter. Fill each with 1 tbsp golden syrup and add pudding mix. Bake 20–25 minutes.

3. Allow to stand for 5 minutes before removing from tin. Sit puddings upside down (if they don't sit flat, remove a thin slice of the top to level). Serve warm, drizzled with golden syrup and thick cream or a scoop of vanilla ice cream.
