Matzo Cake Recipe (Jewish Passover Cake)


250g butter, melted
1 cup brown sugar
1 tsp ginger
1 tsp all spice
1 tsp cinnamon
1/2 cup crushed nuts
1/2 cup matzo meal (fine)
2 cups mixed fruit with imitation cherries
4 eggs
4 broken matzo wafers soaked in water for a few minutes, then drained (squeeze the water out).
1/2 cup water (if needed)


Mix all ingredients together and pour into a square cake tin/silicone mould (it makes cutting easier). Bake in moderate oven 180 C (160 C fan forced) for about 90 minutes. Check after 1 hour to make sure it is not catching.
